Kesar, also known as saffron, is a highly prized and aromatic spice derived from the dried stigma of the flower of Crocus sativus, commonly known as the saffron crocus. It is known for its distinct color, flavor, and numerous applications in cooking, as well as its potential health benefits.In Ayurveda, kesar (saffron) is highly valued for its properties and is considered a valuable herb with numerous health benefits. PROPERTIES OF KESAR ACCORDING TO AYURVEDA-

Guna (Quality): Laghu (Light): Kesar is considered light in quality, which means it doesn't impose a heavy burden on the digestive system.

Rasa (Taste): Tikta (Bitter): Saffron is classified as having a bitter taste, which can stimulate digestion and help balance certain doshas.

Veerya (Potency): Ushna (Hot): Kesar is described as having a heating potency. This means it can create warmth in the body and is often used to balance cold and damp conditions.

Dosha Affinity:Kesar is believed to pacify Vata (air and ether) and Kapha (earth and water) doshas while potentially aggravating Pitta (fire and water) dosha. This makes it suitable for balancing Vata and Kapha imbalances.
